Varietals: 100% Chardonnay
Vinification/Ageing: Soft pressing followed by 20 day fermentation in stainless steel. First ageing 7 months, partly in stainless steel and partly in barrique. Aged on the lees for 30-36 months with an additional 3-4 months in bottle before release.
Description: A fragrant bouquet presages an exceptionally fresh taste. The colour is a bright straw yellow, with a fine and persistent perlage. The nose is fresh and elegant, with clear notes of hawthorn and bread crust, hints of apple and dried fig. The finish is long and dense with very pleasant flavour.
