Varietals: Corvina 40%, Corvinone 25%, Rondinella 30%, Oseleta, Molinara e Croatina 5%, only own grapes, hand selected
Ageing/Vinification: The Ripasso is made using traditional technique, which consists of bringing the grapes of Valpolicella wines in contact with the grape skins of leftover from the Amarone pressing. This process lasts between ten to twenty days, which allows the transfer of sugar, colour, polyphenolic substances and softness. After fermantation, the wine is refined in 3,5 to 5hl French oak for at least 2 years before bottling.
Description: Intense ruby red colour with purple reflections. Very floral with red berries such as raspberry and blackberry. Elegant, smooth and very fruity on the palate. Well-balanced with a touch of spice. Soft tannins with plenty of freshness. Long finish.
Food Pairing: Wine of medium structure, it will be ideal with the whole meal because of its freshness.
It could accompany risotto, medium aged cheeses or savoury dishes.
