Ageing/Vinification: Aged a minimum of two years of which twelve months in large oak or chestnut barrels
Description: A slightly out side the box Nebbiolo. Coming from Carema an obscure region in Piedmont, it differs from the norm. Ruby of medium intensity with garnet red tints. Nuances of cinnamon and nutmeg as well as of fruit preserved in alcohol. Smooth flavour, softly tannic, well balanced acidity due to its refining process in wooden casks. It leaves an intense aftertaste together with spicy nuances. Not as overpowering as Barolo and Barbaresco. If you like Oregon Pinot Noirs this is a nice crossover.
Pairings: Suitable for dishes as agnolotti (sort of ravioli), risotto, polenta, black grouse or pheasant, grilled meat, salami and slightly mature cheese.
