Varietals: 95% Sangiovese, 5% Canaiolo (organic)
Ageing/Vinification: Spontaneous fermentation is made in concrete vats, without any yeast addiction or temperature control. Followed by a very long skin maceration for a minimum of 25 days. The wine is aged for 16 months in big french and slavonian oak. After that, the wine spends 1 month in concrete, where it decants naturally before it is bottled by gravity without any filtration or clarification during the waning moon.
Description: Bright red. Red cherry, rosemary and balsamic milk chocolate on the perfumed nose. At once dense and juicy on the palate, with fresh herb and peppery red berry flavors given grip by lively tannins on the bright, long finish.
