Vinification/Ageing: Harvested in late-October, classic red fermentation in vertical wooden ‘tini’ (conical in shape), with maceration on the skin for 25 days. Maturation, 14 months in large wooden ‘tini’.
Description: Smoke and dark wild cherry on the nose, elegant, mineral and light, flinty. Fresh and well-balanced.
Pairings: Fresh cheeses and cold cuts/salami appetizers. Matches well with fish dishes
