Ageing/Vinification: The red grapes, harvested in early September, are vinified and soft-pressed. The must is fermented in stainles steel at low temperature.
Description: This is a unique Barbera. The producers gently press the grape and then immediately remove the skin so there is no contact with the freshly pressed juice. This produces a beautiful, delicate white wine that possesses a fresh, crisp pallet, with wonderful aromas of green apple and a long finish.
