Varietals: 95% Sangiovese, 5% Canaiolo (organic)
Ageing/Vinification: Spontaneous fermentation takes place in concrete vats, without the addition of yeast or temperature control. Maceration on the skin follows for a minimum of 25 days. The wine is then aged for 16 months in large French and Slavonian oak barrels, followed by one month in concrete, where it decants naturally before it is bottled by gravity without any filtration or clarification during the waning moon.
Description: Bright red in colour. Notes of red cherry, rosemary, balsamic, and chocolate on the nose. At once dense and juicy on the palate, with fresh herb and peppery red berry flavors given grip by lively tannins on the bright, long finish.
