Vinification/Ageing: Hand-harvested, pressed, and spontaneously fermented in stainless steel. Aged in stainless steel on the lees before bottling.
Alcohol: 12.5%
Description: Straw yellow with notes of ripe stone fruit, beeswax and layered minerality. Translated as “stray-vines”, Ayunta spent years mapping the white grape vines that traditionally were planted among the red. Timing is everything in producing this wine as coordinating the ripening and harvest is difficult. A rare wine made only in the best vintages.
