On the palate it is juicy, fresh and distinctly savoury, with lively acidity, a light mineral\/stony quality and enough structure to make it feel closer to a light red than a delicate rosé.\u003c\/p\u003e\u003cp\u003eAgeing\/Vinification: The grapes undergo partial cryomaceration \/ short skin contact, extracting the characteristic deep cherry-pink colour and vibrant fruit while avoiding excessive extraction. Fermentation takes place in stainless steel at approximately 15–18°C. The wine then rests on its fine lees, with roughly six months in stainless steel followed by bottle ageing.
