Vinification/Ageing: Alcoholic fermentation in stainless steel vats for 15 days, malolactic fermentation, then 18 months ageing in large, neutral oak barrels.
Description: At 850 meters above sea level, the vines here are planted on relatively new lava flow (1600s) that has turned into thick gravel. The wines are bright, aromatic, and taste of fermented hay and dusty wild herbs. There is only 1 hectare of this tiny cru and 2,000 bottles are produced annually.
