Varietals: 100% Trebbiano di Soave
Vineyard: new vineyard situated in the Fittà microzone. Soil is of volcanic origin, made up of compact basaltic rocks. The most interesting of the old Trebbiano di Soave vines which live in high hill vineyards have been selected and multiplied in collaboration with the Agriculture Faculty University of Milan, creating a new vineyard entirely dedicated to this interesting but little known variety.
Ageing/Vinification: 15 day fermentation in stainless steel followed by 15 month contact with the lees and 12 months ageing in the bottle before release.
alcohol fermentation without the skins using natural yeasts, in steel vats for 15 days at 15C-16 °C. No malolactic fermentation. Aged 15 months in contact with the fine sediments in steel vats. Only one membrane filtration before bottling. 12 months in the bottle before being released.
Description: White floral notes (lily of the valley, jasmine), tree fruit and mineral (flinty) aromas. The palate is creamy and savory, with ripe pear, aromatic herbs and mineral alongside crisp acidity.
