Tasting Notes: Bright ruby in colour, with rich texture. Its olfactory framework is distinct and decidedly characterful, with aromas of wild fruit and California plum, fleshy flowers that seem to spill into the glass, thyme and mint, a hint of clay and spicy puffs. In the mouth it is a champion of proportion: it has jovial softness, measured tannic texture and a fresh-savoury counterbalance to balance it all. Worthy of note is the lengthening persistence.

Ageing/Vinification: Pre-fermentation for 2-3 days at 12 ° C, followed by fermentation of 20 days at controlled temperatures of 20°C. Aged in new French oak barrels for 4 months then 2 months in bottle.

Vineyard: Vineyards are located in the Carovigno∙Brindisi area, on tufaceous-calcareous soil.
