I Clivi – ‘A Tessa’ Ribolla Gialla Venezia Giulia IGP
Grape: 100% Ribolla Gialla, a native Friulian white grape known for its bright acidity, floral character, and distinctive mineral and saline profile.
Region: Friuli Venezia Giulia, Venezia Giulia IGP. The vineyards are located around Corno di Rosazzo, near the Slovenian border, on marl and sandstone soils that contribute freshness, minerality, and a pronounced savoury character.
Tasting Notes: Pale straw yellow. Delicate aromas of white flowers and lemon peel, with subtle citrus and mineral notes. Fresh and vibrant on the palate, with lively acidity, a distinctly saline character, and a long, dry finish.
Vinification & Ageing: The grapes are hand-harvested and gently pressed whole. Fermentation takes place spontaneously with indigenous yeasts in stainless steel, followed by 6–8 months of ageing on the fine lees.
Ageing Potential: 3–5 years.
Food Pairing: Fresh seafood, shellfish, grilled vegetables, creamy pasta, risotto, fresh cheeses, and light poultry dishes.
Fun Fact: I Clivi is dedicated primarily to native Friulian varieties and has a strong focus on old vineyards, low yields, spontaneous fermentation, and maturation on the lees rather than in barriques. The winery's vineyards lie close to the Slovenian border, making this a particularly interesting expression of Friuli's borderland terroir.

Cave Mont Blanc – Vini Estremi Vallée d’Aoste DOC Blanc de Morgex et de La Salle
Grape: 100% Prié Blanc, an indigenous Alpine white grape uniquely adapted to high-altitude vineyards. The vines are ungrafted and can thrive at elevations where few other grape varieties can ripen successfully.
Region: Valle d’Aosta, Blanc de Morgex et de La Salle DOC. The vineyards are located between approximately 1,100 and 1,200 metres above sea level, among some of Europe's highest vineyards. The extreme altitude creates a cool growing environment that preserves freshness and acidity.
Tasting Notes: Pale straw yellow with greenish reflections. Fresh and delicate on the nose, with notes of exotic fruit and subtle mineral nuances. The palate is crisp and vibrant, with pronounced minerality and a clean, refreshing finish.
Vinification & Ageing: Traditionally fermented in stainless steel at controlled temperatures using indigenous yeasts. The wine then spends approximately 8 months in stainless steel followed by 1 month in bottle before release.
Ageing Potential: 3–5 years.
Food Pairing: Fontina DOP, alpine cheeses, charcuterie, freshwater fish, grilled vegetables, and light mountain dishes.
Fun Fact: The vineyards used for Vini Estremi reach around 1,200 metres above sea level. Prié Blanc is planted on its own original roots because the sandy, gravelly soils and extreme altitude naturally helped protect the vines from phylloxera.

Centopassi – Ondapazza Giato Grillo-Catarratto DOC Sicilia
Grape: 60% Grillo and 40% Catarratto, two of the most representative native white grapes of western Sicily.
Region: Sicilia DOC, western Sicily. The vineyards are located in the Belice area, where the Mediterranean climate and inland altitude help preserve freshness and acidity while allowing the grapes to develop ripe fruit and aromatic complexity.
Tasting Notes: Bright straw yellow. Fresh aromas of citrus, white flowers, ripe pear, and Mediterranean herbs, with subtle mineral nuances. Fresh and balanced on the palate, with lively acidity, a pleasant savoury character, and a clean, persistent finish.
Vinification & Ageing: The grapes are hand-harvested in small boxes, gently crushed, and fermented in stainless steel. The wine is then matured in stainless steel for approximately four months.
Ageing Potential: 2–4 years.
Food Pairing: Seafood, shellfish, fried fish, fresh pasta, couscous, grilled vegetables, white meats, and fresh cheeses.
Fun Fact: The name Ondapazza refers to Onda Pazza, the symbolic radio programme of Radio Aut, the free radio founded by Peppino Impastato in Sicily. The wine is part of Centopassi's Giato collection, named after the ancient district surrounding the Greek theatre on Monte Jato. The wines of Centopassi are produced from vineyards confiscated from the Mafia and managed through the Libera Terra project.

Fondo San Giuseppe – Caramore Romagna DOC Bianco Modigliana

Grape: Trebbiano and Chardonnay.
Region: Romagna DOC, Bianco Modigliana. The grapes come from a vineyard of more than 20 years old in Modigliana, planted on poor, stony clay-limestone soils. The north-eastern exposure and altitude help preserve freshness and acidity.
Tasting Notes: Intense straw yellow. Aromas of ripe wild pear, citrus, and delicate floral notes are accompanied by distinctive chalky mineral nuances. Broad and structured on the palate, with lively acidity, a savoury character, and a persistent mineral finish.
Vinification & Ageing: The grapes are hand-harvested and fermented in stainless steel. Half of the wine is aged in stainless steel, while the other half matures in Allier oak tonneaux for approximately six months. The two portions are then blended before bottling.
Ageing Potential: 4–6 years.
Food Pairing: Fresh pasta, risotto, seafood, grilled vegetables, white meats, soft cheeses, and delicate appetizers.
Fun Fact: Fondo San Giuseppe is located in Valpiana, in the Romagna Apennines at around 400 metres above sea level. The winery has built its identity around the potential of Romagna's white wines, with particular attention to altitude, soil, freshness, and minerality. Caramore takes its name from the Italian words “caro amore,” meaning “dear love,” reflecting the producer's love for the land and nature.
