Pecorino nel Fieno

For the Malandrino Cerasuolo, Giovanna and Graeme landed on Pecorino nel Fieno, a sheep’s milk cheese aged in hay. Unlike some pairings that take a little experimenting, this one was an immediate hit. Chef Giovanna explains why:
This pairing was a hit from the start. Graeme and I both said “WOW” when we tried it. The Cataldi Madonna Cerasuolo’s juicy red-fruit character and freshness work beautifully with the richness and saltiness of the Pecorino nel Fieno, while its acidity keeps everything lively. The wine also picks up the cheese’s earthy, hay-like character without overpowering it. It’s a simple pairing, but there was an immediate connection between the two.
