Vinification

Hand-harvested grapes are gently pressed and spontaneously fermented with indigenous yeasts in concrete tanks. The wine macerates on the skins for approximately one week and then remains in concrete tanks for several months. No oak is used.

Vineyard

The vineyards are located in Val di Mezzane, at approximately 250–300 m above sea level, on calcareous, medium-textured soils with east-facing exposure. The vines are organically farmed.
