Vinification

Hand-harvested grapes are spontaneously fermented in concrete tanks. The wine then undergoes a second fermentation on the Amarone pomace for approximately 7–10 days, giving it additional structure and aromatic depth. It is aged for 18 months in 25-hL oak casks.

Vineyard

Mezzane di Sotto, in the eastern Valpolicella. The vineyards sit at approximately 250–300 m above sea level on calcareous soils, with southwest exposure. The vines are planted using the traditional double pergola system.
