Ageing/Vinification: Single variety vinification. Handmade berries selection, controlled temperature fermentation in 55 hl Allier oak casks with daily pumping over skins. Indigenous yeasts and soft pressing. Malolactic fermentation. Aged 24 months in 55 hl Allier oak casks then in bottle for at least 24 months.

Vineyard: Vineyard flocated in the town of Solopaca, Sheet 8, parcel 187+353+75+171, around 150m above sea level with east / west exposure on sandy soil with little stones.
