Vinification

The grapes are hand-harvested and brought to the winery in small crates to preserve their freshness. Fermentation takes place in stainless-steel tanks. After fermentation, approximately half of the wine is aged in stainless steel, while the other half matures in Allier oak tonneaux for about six months. The two portions are then blended before bottling.

Vineyard

The Caramore vineyard is located in Modigliana and consists of vines over 20 years old planted on poor, stony clay-limestone soils. The vineyard covers approximately 0.7 hectares and has a north-eastern exposure. The combination of altitude, cool exposure, and mineral-rich soils contributes to the wine’s freshness, structure, and distinctive mineral character.
