La Colombera – Derthona Colli Tortonesi DOC


Pronunciation: “DEHR-toh-nah”

Grape: Timorasso, an aromatic Piedmontese white grape known for texture, minerality, and aging potential.

Region: Piedmont, Colli Tortonesi hills. Calcareous-clay soils create wines with elegance, structure, and longevity.

Tasting Notes: Pale gold with green hints. Aromas of white flowers, stone fruit, and mineral notes. The palate is textured, fresh, with vibrant acidity and a persistent, complex finish.

Vinification & Ageing: Stainless steel fermentation, with oak or large cask ageing to add depth and complexity.

Ageing Potential: 7–12 years for full maturity.

Food Pairing: Seafood, white meats, risotto, and soft or aged cheeses.

Fun Fact: Derthona is the historic name of the Tortona area, known for producing rare, high-quality Timorasso wines.

Biondi – San Nicolò Etna Rosso

Pronunciation: “Ne-REL-lo Mas-ca-LE-se”

Grape: Nerello Mascalese, a Sicilian red grape known for elegance, red fruit, and minerality.

Region: Sicily, Etna. Volcanic soils and high-altitude vineyards produce vibrant, aromatic wines with fine structure.

Tasting Notes: Bright ruby with garnet reflections. Aromas of red cherry, wild berries, and subtle spice. The palate is fresh, medium-bodied, with silky tannins and a mineral finish.

Vinification & Ageing: Fermented in stainless steel, aged in oak barrels to enhance complexity.

Ageing Potential: 5–8 years for full expression.

Food Pairing: Roasted meats, mushroom dishes, grilled vegetables, and mature cheeses.

Fun Fact: The San Nicolò vineyard, owned by Biondi, is one of the highest-altitude vineyards on Etna, around 800–950 m above sea level. The cool nights and volcanic soils help produce fresh, elegant Etna Rosso with bright red fruit and that signature mineral backbone. Biondi is famous for respecting these old terraces and traditional bush-trained vines, so every bottle really tells the story of Etna’s slopes.

Colombera & Garella – Pian di Peu

Grape: Nebbiolo

Region: Alto Piemonte, northern Piedmont foothills. Sandy-volcanic/porphyry soils lend freshness, structure, and minerality.

Tasting Notes: Deep ruby with garnet highlights. Aromas of red cherry, rose, and subtle tar. The palate is structured yet balanced, with fine tannins and a persistent finish.

Vinification & Ageing: Hand-harvested, low-intervention vinification, often fermented in stainless steel with optional short wood ageing to enhance texture.

Ageing Potential: 7–10 years to reach full expression.

Food Pairing: Ideal with risotto, roasted meats, braised dishes, and aged cheeses.

Fun Fact: “Pian di Peu” is a single vineyard, highlighting northern Piedmont Nebbiolo’s terroir-driven elegance.

Mascarello – Dolcetto Vigna S. Stefano

Pronunciation: “DOHL-chet-toh”

Grape: Dolcetto, a classic Piedmont red prized for soft tannins, juicy black fruit, and early approachability.

Region: Piedmont, Alba hills. Clay-limestone soils give freshness and delicate fruit character.

Tasting Notes: Ruby red with violet highlights. Aromas of black cherry, plum, and almond. The palate is juicy, soft, and approachable, with moderate tannins and a smooth finish.

Vinification & Ageing: Fermented in stainless steel to preserve fruit; usually released young.

Ageing Potential: 3–5 years.
