Ettore Germano – Alta Langa Bianco DOCG Extra Brut

Grape: Pinot Noir and Chardonnay, traditional méthode classique varieties used for high-altitude sparkling wines.
Region: Alta Langa, Piedmont. Hilltop vineyards over 250–500 meters with limestone and marl soils that enhance freshness and finesse.
Tasting Notes: Pale straw with fine, persistent bubbles. Aromas of green apple, citrus zest, white flowers, and toasted brioche. The palate is crisp and precise, with vibrant acidity, fine mousse, and a long, mineral-driven finish.
Vinification & Ageing: Traditional method sparkling wine with secondary fermentation in bottle and extended lees ageing for complexity and texture.
Ageing Potential: 5–8 years.
Food Pairing: Oysters, sushi, fried seafood, and delicate antipasti.

Cavallotto – Langhe Nebbiolo DOC


Grape: Nebbiolo, Piedmont’s noble grape known for its aromatic complexity, firm tannic structure, and remarkable ageing potential.
Region: Langhe, Piedmont. Calcareous marl soils and rolling hills provide structure, elegance, and lifted aromatics even in younger expressions.
Tasting Notes: Light ruby red. Aromas of red cherry, rose petals, raspberry, and subtle spice. The palate is structured yet approachable, with fine tannins, bright acidity, and a savoury, lingering finish.

Region: Valle d’Aosta. High-altitude vineyards with rocky, glacial soils and dramatic temperature shifts that preserve acidity and aromatic intensity.
