Vinification

In oak casks of 50 hl to optimize parcellar selection. Filling of the oak casks entirely by gravity flow. Alcoholic fermentation in temperature of 30C to 32°C with several pumping over and punch-downs. Maceration on the skins for 3 weeks. Aged in 50hl French oak casks for 20 months then in bottle for a minimum of 18 months.
