Vinification

In oak casks of 50 hl to optimize parcellar selection. Filling of the oak casks entirely by gravity flow. Temperature controlled fermentation of 28C to 30°C with several punch-downs. Maceration on the skins for 4 weeks. Aged om French tonneaux for 24 months then in bottle for a minimum of 18 months

Vineyard

Located on the top of the ridge, the 5.17h vineyard overlooks the incredible panorama of Monte Giovi. Clay soil mixed with limestone is ideal for the expression of this variety; the temperate and sunny exposure favours a balanced ripening of the grapes.
