Tasting Notes: Mineral based nose of flint and graphite; palate is crisp and balanced with citrus notes on a long saline finish.

Ageing/Vinification: From an early harvest of the red Nerello Mascalese grape, this is a unique still white that honours the local tradition of using red grapes as base for making sparkling wine. Fermentation in stainless steel with native yeasts, no maceration. 6 months ageing in cement on the lees.

Vineyard: 2,8 hectares of 50 to 100YO vines, located at almost 700m above the sea level on the northern slopes of Mount Etna. Volcanic soils.
