Vinification

Fermentation in stainless steel barrels, 20 day maceration. Malolactic fermentation in wood. Ages in large 21-hectoliter oval barrels for 20 months. No fining, coarse filtration prior to bottling. Once bottled, the wine ages for additional four months before release.
