Vinification

Partial drying of the grapes in the vineyard (10%).The hand-picked grapes are immediately softly pressed. The first draining must (about 50% yield) is separated, partially clarified and left to ferment at low temperature until the sugars are completely exhausted. After decanting, the wine remains on its noble lees throughout the winter and is bottled in late spring.

Vineyard

Estate vineyards located in the municipality of Ziano, on the Piacentini hills in Valtidone. The ferreted clays of the soil and the slopes between 270m and 220m above sea level are perfect for enhancing the aromas and the most specific characteristics of intense tannins and excellent acidity.
