Tasting Notes: This is a lively brut, full of fragrance, tending to smoothness and an accessible sensory language, with a balanced and versatile style. In the glass it is yellow in colour with greenish reflections, enlivened by a fine and persistent pérlage. The nose is fresh, with floral notes of lime, shades of citrus, white peach and green pepper. The mouth is tight and crisp, fresh and vertical, full-bodied, refined and with a lingering very enjoyable finish.
Ageing/Vinification: Soft pressing, cold settling, inoculation with selected yeast. Fermentation of 20 days in stainless steel. Partial malolactic fermentation. First ageing 7 months, partly in steel and partly in barrique. Aged on the lees for 20 to 26 months. 3 to 4 months of post-disgorgement refinement.
Vineyard: Vineyards are located near Mount Alto which acts a barrier against the north winds as well as the fog that creeps up from the Po Valley. This long, isolated mountain divides Lake Iseo into two parallel gulfs - that of Iseo, in the province of Brescia, and that of Sarnico, in the province of Bergamo. The mountain is made of marine sedimentary rocks, i.e. lime, marl and sandstone. All perfect soils for grapevines, though used by brickworks and cement quarries in the past.
