Tasting Notes: In the Birbanera wine Sangiovese meets Canaiolo, creating a harmonious balance of flavours and aromas. Intense ruby red colour with plenty of dark fruit aromas and hints of leather and black tea. Medium bodied, round and fresh, featuring fine tannins and a juicy finish. The characteristic features of the Canaiolo soften the austerity of the Sangiovese, conferring roundness, volume and spicy aromas to this wine; a crowd pleasing blend.
Ageing/Vinification: Vinification starts in stainless steel vats of 40 hl to optimize parcellar selection. Cold pre-fermentation maceration for 5 days at temperatures of 27C to 28°C; several pumping over and punch-downs. Maceration on the skins for 2 to 3 weeks. Aged in small oak casks of two and three years, then in bottle for a minimum of 10 months.
Vineyard: Amantis has 5.17h in the Montecucco area. The Birbanera vineyard is In the area where the clay reaches the surface of the soil, a very particular Canaiolo “dal raspo rosso” (with red stem) has been planted. This vineyard comes from “mass selection,” a process in which the plants that provide grapes of best quality are chosen and reproduced.
