Ageing/Vinification: The winemaking process involves destemming, followed by a 34-day maceration and fermentation in steel vats. The wine is then matured for 6 months, with 50% aged in steel vats and the other 50% in oak barrels, allowing for a balanced development of flavors.
Vineyard: This wine is the product of one of the oldest indigenous Sicilian grape varieties, grown in the harsh clays of the central Sicilian highlands, covering 8.05 acres (3.26 hectares) at an elevation of 1,800 feet (550 meters) above sea level, where the highly impermeable soil, with a sub-alkaline pH, a coherent structure, and a clay content of 42.8%, provides a unique environment for its cultivation, while being poor in limestone and organic matter.
