Tasting Notes: A rare wine made only in the best vintages. Straw yellow with notes of ripe stone fruit, beeswax and layered minerality with aromas of citrus. On the palate, notes of lime, grapefruit with a very interesting salinity towards the finish.

Ageing/Vinification: Hand-harvested, pressed, and spontaneously fermented in stainless steel. Aged in stainless steel on the lees before bottling.

Vineyard: Sourced from bush vines grown on the north slopes of Mount Etna. Translated as “stray-vines”, Ayunta spent years mapping the white grape vines that traditionally were planted with red. Timing was everything in producing this wine as coordinating the ripening and harvest is difficult.
