Tasting Notes: The colour is quite brilliant and dense. It is intense and complex on the nose, with notes of rhubarb, earthy fervor, hints of ash, and a distinct mineral quality. On the palate, it is quite warm and still presents vibrant tannins due to its youthfulness. It is intense and highly persistent.
Ageing/Vinification: Alcoholic fermentation, induced with selected indigenous yeasts from the vineyard, takes place at a constant temperature of around 27°-28°C for 15 days. Skin maceration lasts from 15 to 60 days depending on the tank. After racking, the wine is stored in oak barrels of 5 hl and 15 hl, none of which are first-use. The spontaneous malolactic fermentation lasts about 13 days. Aging takes 30 months, with at least 24 months in wood. The wine is blended in stainless steel and bottled without filtration in July.
Vineyard: 5h vineyard, 300m to 400m above sea level with south exposure. Trellised vineyard with vines aged between 10 to 30 years on volcanic ash soil with moderately coarse texture, while along the Calore river, clay-limestone soil.
