Spontaneous fermentation in French oak vats; malolactic fermentation in French oak casks, where the ageing continues for 14 to 16 months before blending. Then 6 to 8 months of bottle maturation.

Vineyard is about 0.6h in Castiglione d'Orcia, between 320m to 480m above sea level with west/south west exposure. Soil is vertical fissile schist, with some clay.
