Tasting Notes: This mixed case includes one bottle of each wine: Fittà Soave Classico DOC: bright straw yellow in colour with aromas that are dominated by sulphurous notes and smoke, combined with citrusy overtones. The palate is long and expressive, a sapid trail combines with fruity and almondy sensations. Castellaro Soave Classico DOC: Bright yellow in colour. Aromas open with mineral sensations accompanied by a distinctive white pepper note and jasmine aroma. The palate is taut and dynamic, the finish is long and delicately salty. Tremenalto: bright straw yellow in colour. Warm and chalky aromas with Quince jam combines with orange blossom and candied fruit. The palate is full and well-rounded, driven by a sapid, fresh background.
Ageing/Vinification: Each wine is vinified in the same way: Alcoholic fermentation in steel for 14 days at 15-18 °C. Malolactic fermentation is not carried out Aged 12 months in contact with the fine lees in steel vats. Only one membrane filtration before bottling. Aged 24 months in bottle.
Vineyard: These are single vineyards wines. The vineyards are pieces of a colourful mosaic that make up and sum up the volcanic area of Soave Classico. This territory was formed from about 65 to 20 million years ago, at the start of the Tertiary period. In this area covered by a vast tropical ocean, intense volcanic activity developed underwater and, subsequently, subaerial. Fittà: The vineyard, covering about one hectare, is located at the heart of the Fittà U.G.A., not far from the hamlet of the same name. Part of it is situated in the south and part in the east, at an elevation of 255m above sea level, with slopes ranging from 15% to 45%. The old Garganega vines, planted in the early 1940s, grow on volcanic soil whose substratum is made up of strongly altered basalt vulcanite. Castellaro: The vineyard consists of a small plot of less than one hectare, facing north on the slope of the ridge rising from Monte Castellaro towards the hamlet of Fittà. It is located at an elevation of 220 m above sea level, with 20% slopes. The volcanic soil consists of altered basalt vulcanite, moderately deep and with a profile rich in rock fragments. The Garganega vines are Pergola Veronese trained and, on average, 50 years old. U.G.A.: Tremenalto: 2h in size, 80m to 130m above sea level with western exposure. The vines were lanted in 1962.
