Tasting Notes: A very pale color, which is more typical of French wines. Clear and bright, with hues verging on garnet-red. An intense bouquet of red fruity aromas of cherry and redcurrant, and of delicate floral notes of violet. Excellent on the palate, it is immediately clear that it has all the makings of a great wine, having the necessary elegance and finesse. Rich and lively with acidity, well-crafted tannins.
Ageing/Vinification: 45 days maceration, low temperature fermentation in concrete vats with indigenous yeasts. 36 months ageing in 10-30 hL French and Slavonian barrel, 1 month in concrete, 5 months in bottle. No fining or filtration.
Vineyard: The winery extends over an area of 200h set in a natural amphitheater, which is exposed to the south and sheltered from the north winds. The vineyards are spread over 12h, the olive trees over 8 hectares, and the rest is covered with towering, ancient oaks and chestnut trees which surround and isolate the winery from the outside world.
