Ageing/Vinification: Fermentation controlled for 45 days under slight pressure in stainless steel. Ageing on the lees for 9 months in steel with daily batonnage followed by an additional 6 months in the bottle.
Description: Fermented without the skins, this red grape vinified as a white has a rosy hue and is truly unique. Aromas of white cherry, white strawberry and smoke are followed by a mineral flavour drawn from the vineyard's calcareous clay soil. Only 450 cases produced.
